Quality & Yield Grades

Quality Grades are based primarily upon marbling. Prime being the best, select being the most common.
Beef pricing is based on quality grades - Prime brings the highest price - select the lowest.

 

Yield Grades describe the amount of external fat between the saleable meat and the hide. Yield Grade also affects price,
as Yield Grades 4 & 5 require more trimming time and cost that Yield Grades 1 - 3 at any Quality Grade.
